lemon curd and pate sucree

December 8, 2004 by Jane

A photo of the lemon bars I made for the holiday potluck here at work:

They came out absolutely fantastic and I want to make them again. I got the recipe from Ms Martha Stewart’s cook book.

      Lemon Curd Filling:

Oddly, the recipe in my MS cookbook does not include the part about heavy cream and confectioner’s sugar. Don’t know where that came from, and you don’t need it. This recipe also leaves out the part about straining the egg yolks into the saucepan, and I think the recipe in the book also called for 3 egg yolks + one egg. Wonder why all the changes? Where do thse recipes come from…

      Patee Sucree (the crust):

Just the same as it was in the book.

I think tonight I will just post the curd recipe exactly as it was in the book.
