Here is the recipe for the simple but delightful dish Allison and I made for dinner last night. It ROCKED. Thank you Allison!
Ingredients:
Juice of one lemon
1/4 cup of olive oil
handful of fresh basil, chopped (dill would work also)
two large cloves garlic, chopped
salt and pepper
two zucchini
one roma tomato
three or four yellow star squash
small pasta, like ziti or orzo or macaroni, 4 servings
fresh spinach
feta cheese, crumbled
Mix lemon juice, oil, basil, garlic, salt, and pepper in large bowl. Set aside. Start cooking the pasta, and turn on your oven’s broiler. Chop squashes into good-sized pieces, put in a 2″ deep metal pan. Drizzle oil over squash, add some salt and pepper, then place in broiler. When squash are almost done (about 8 minutes, starting to brown), add sliced tomato (tomato takes less time to cook).
Zucchini should be a little blackened when they are ready. Remove from broiler. Drain pasta, pour into bowl with the lemon/oil mixture and toss. Add squash, toss some more. Serve in pasta bowls.
Sprinkle feta liberally over the top, and throw a handful of raw spinach on top of that in each bowl. Serves four!
EAT. Mmmmmm!!!!

i had some without garlic and without feta and it was pretty freaking good.

I can understand passing on the feta, but garlic? How can jane have a boyfriend that doesn’t like garlic? STRANGE!
ok, wait I take it back. Because it was raw. Raw garlic is HAWDCORE!!
It totally is!!
He doesn’t like the spicy food either, and neither do I, so it’s a win-win.
