I made lunch last night, which will also serve as dinner. Here is the recipe!
1 chicken breast, cut into 1/2 inch – 1 inch pieces
1 box of Near East wild rice pilaf
1/2 red bell pepper, chopped
4 leaves fresh basil, chopped
tbsp lemon juice
splash tamari sauce
handful of sliced almonds
handful of golden raisins
salt & pepper to taste
Start the rice in a saucepan, it takes 25 minutes to cook. At the same time, start sauteeing the bell pepper in some olive oil over medium flame in a big fry pan. When it is almost cooked, throw in the chicken, lemon juice, salt, pepper, and tamari sauce. Sautee chicken until done, about ten minutes. Throw in basil, raisins, and almonds. When the rice is done, dump it into fry pan with chicken and stir it all up. Now you can eat it!
Or eat it the next day, like me. Mmm. If I had some plain yogurt with me, I would totally be throwin a dollop on top of this.
I imagine it would work with beef or fish instead of chicken, or tofu instead of meat.
